The tradition of drinking matcha
In the Land of the Rising Sun, brewing and serving matcha is a true art, passed down from generation to generation, which is taught for years in special schools. Drinking matcha itself is a ceremony with its own set of rules. Powdered tea in a porcelain bowl is poured with boiling water from a cast iron kettle and stirred with a special bamboo "brush" (called chasen). Tradition requires that the entire contents of the bowl be drunk, which is why the ritual often ends with a loud slurp. However, this is not a faux pas - it is most welcome.

Matcha owes its characteristic color to a special cultivation method. Two weeks before harvest, the tea bushes are shaded from the sun. This is when the leaves take on a pale shade of green. They are then collected, dried, and ground into powder. Matcha can be drunk hot or cold, and is traditionally added to many dishes in Japan, such as soba noodles and desserts: ice cream or cakes.
